Crème Caramel Vs Crème Brûlée

Crème caramel is a baked custard that's cooked in a caramel-lined ramekin; crème brûlée is a baked custard that's topped with a sheer, crackly layer of caramelized sugar; and pot de crème is, well, a baked custard. Same technique, but different results.

A HISTORY STORY: Creme Caramel (Flan)

Flan originated in Rome as a savory dish. It was usually served alongside meat or fish. But when a chef added honey to create a sweet version, the dish exploded in popularity, and cultures worldwide took notice. The Spanish adopted the recipe and added their own twist


Crème brûlée or crème brulée, also known as burnt cream or Trinity cream, and virtually identical to the original crema catalana, is a dessert consisting of a rich custard base topped with a layer of hardened caramelized sugar.
